Ribbon lights are popular if all you are looking for is decorative lighting. It is simple to put up, an because of it’s size, is easy to hide under the eaves of the cabinets.
If its task lighting you are looking for, something to actually illuminate the space you are working in so you can see better, LED lights are a wonderful alternative and usually can be plugged into an outlet as opposed to doing major wiring.
They have all sorts of under cabinet lighting these days, from the little circles to lights that resemble the old florescent tubes but are really LEDs now. The nicest things about them, they are affordable, easy to install, and they provide both accent lighting as well as task lighting. Best of all they draw practically no power and are cold light, which means no worries about things getting to hot if you leave them on for hours on end. The bulbs last a lot longer than normal bulbs too!
You can find them at most superstores like Walmart and Target, and of course at home centers like Lowes and Home Depot. They are also available at specialty stores like Bed Bath and Beyond and Linens and Things, although I think you will be paying more at these 2 places. There is also the online option, but personally I like to look and touch before I buy. However, you can at least get an idea of what is out there by looking online. Here are some sites I found interesting!

As you will see there are tons of options. Hopefully I was able to shed some light on the problem (ha ha) and I hope you find what you are looking for!
